Snacks are a good way to keep a balanced diet. It is good to eat about 4-6 small meals a days. Healthy snacks should be filling in the food pyramid. Snacks, such as fruits and vegetables, can give us a great burst of energy to get through that afternoon slump. A handful of almonds can provide much needed protein for our diet. Below is a fun snack that covers quite a few food groups. You can add or subtract items to fit your palate.
1 cup grated carrot
1 cup chopped celery
1 cup chopped apple
1/2 cup chopped almonds
1/2 cup raisins
2 to 3 tbsp. mayonnaise
1 tsp. lemon juice
4 ice cream cones
In a large mixing bowl, stir all ingredients well. Scoop into ice cream cones. Serves 4.
