Israeli Couscous

Ever wanted to get more out of eating healthy!? Well I introduce you to the shiny hair salad! This snack is not only yummy but is also good for your skin and body, so enjoy!
 Israeli Couscous
  1. 1 large cucumber, diced (Peeled, if desired)
  2. 3 large tomatoes, diced
  3. 1 large zucchini, diced
  4. 1 cup chopped white onion
  5. 1½ cups chopped parsley
  6. 3 Tbsp chopped mint
  7. 2 Tbsp olive oil
  8. 4 Tbsp fresh lemon juice
  9. 1 tsp freshly ground black pepper
  10. Celtic sea salt, to taste (optional)

    Place the diced cucumber, tomatoes, zucchini, and onion in a large bowl. Add the parsley and mint, and mix well. Add the olive oil, lemon juice, black pepper, and Celtic sea salt.
